Ten years ago Chef Farrokh Khambata introduced the city to the OrFrom a vast variety of Dim Sums with innovative fillings, such as, Edamame with Truffle Oil Dumplings, King Crab and Silver Cod Dumplings and revolutionary new flavours in Sushi & Sashimi to South East Asian delicacies such as Tabanan Char Grilled Grouper with Kaffir Lime Foam, Yum Kung Prawns. Pipette Jus and the stunning Apple Wood Smoked Barbecue Chicken grace the menu. His signature Japanese delicacies such as the Miso Encrusted Black Cod served with Shoyu and Wild Tiger Prawns with Arima Sansho Pepper also make an appearance.
True to his style interesting Vegetarian specialties like Water Chestnuts with Corn Curd and Lemon Chili Drip, Korean Style Tofu with Hot Pepper Flakes and Runner Beans with Edamame Beans in Singapore Sambol Glaze entice the Vegans.
Newly introduced Korean specialty Dolsot Bibimbap in Hot Stone bowls take this gastronomic journey deeper into South East Asia. A variety of cooking techniques including Robata grilling, flambéing as well as ingredients such as Truffle Oil, Lotus Root, Chives, Edamame, Jasmine Tea and Miso add an element of the unusual, as a result of Farrokh skill in present brilliantly uncommon combinations and teaming of flavours. Huge emphasis is put on presentation.
The Dessert Menu has Farrokh experimenting with food science with mind boggling results. A welcome surprise end to the meal!

Motivated by his passion for food, Farrokh Khambata continues to keep reinventing himself and continues his culinary journey with the new “Joss”.
Farrokh Khambata, one of the city’s most successful restaurateurs began his journey with fine food after a short stint with architecture!! His love for all things culinary drove him to successfully complete three years with rankings from the prestigious Institute of Hotel Management, Catering Technology & Applied Nutrition at Bombay, where he won numerous awards, including the All India Student Chef Competition.
After training at the renowned French restaurant “Au Normandy” and later at the “Panorama Rue Boucicot” in Paris. A fierce entrepreneurial streak led Farrokh to launch his fledgling catering company “Catering & Allied”. His expertise and ideas to match his innovative repertoire with the best international culinary standards, took the city by storm with Farrokh blazing a trail of successful events for which the food was much appreciated. “Catering & Allied” is today one of the most sought after catering units in India, with no location or occasion proving too small or large!
Ten years ago, Farrokh Khambata started “Joss” at Kalaghoda, Mumbai, a restaurant that in a very short span became a landmark in the city for fine Far Eastern Cuisine. He introduced dishes like Khowsuey to Mumbai’s palate and there’s been no looking back ever since!
After the tremendous success of “Joss” Restaurant and “Catering & Allied”, Catering and Allied was renamed to “Joss Catering Services” is known for the perfect execution of numerous formal sit down meals, special events catering for product launches, corporate parties, and in house parties for various celebrities and industrialists in Mumbai and for weddings. This is one of Mumbai's foremost and most sought after outdoor catering unit.
Farrokh then presented “Amadeus” at NCPA, the city’s cultural hub in July 2011. “Amadeus” with its new age Mediterranean, Levantine & Spanish cuisine was another first in the city with Farrokh’s menu comprising specialties like Pinchos, Tapas, Cocoas and Paella leaving foodies asking for more…………….. The lounge bar at “Amadeus” is a stylish place to unwind over signature cocktails and live music.
Then came the classy yet casual “Café at the NCPA” in January 2012. This is an alfresco space visualized by Farrokh to offer theatre goers an opportunity to enjoy a fine culinary experience cross diverse cuisines in an informal, culturally infused ambience.
September 2012, saw Farrokh go back to his original love; Far Eastern cuisine. After several trips to the region and research, experimentation and interaction with chefs from Vietnam, Hongkong and Singapore, Farrokh presented yet another labour of love “Umame” at the heritage structure of Eros Cinema, Mumbai. Farrokh’s menu with new world sushi, dim sums has won him huge accolades once again! “Umame” is a true showpiece of fine food, refined tastes and stylish ambience.
Farrokh’s philosophy in Food is simple. Use the freshest ingredients that are made available to you. Don’t compromise on their quality and be creative at every stage. Even to this day, Farrokh feels the need to refresh his skills from time to time.
