Restaurateur Rohan Talwar opened the award-winning Ellipsis in 2012, introducing Bombay to seasonal New American food and craft cocktails. Designer Thomas Schoos is responsible for the restaurant's chic yet inviting decor including vintage and contemporary artwork throughout the two-level space. Offering dinner, weekend brunch and an eclectic, modern take on dim sum for lunch, Ellipsis' unique concept has become a mainstay for Bombay's local and visiting culinary enthusiasts.
Being born in Vietnam and raised in New Orleans, Phuong Tran’s childhood was steeped in hospitality as his parents were in the hotel business and he was surrounded by the rich culture of the French Quarter. Tran initially began his career in engineering, but the kitchen ultimately lured him in and he went on to become classically trained and worked under esteemed chefs like Thomas Keller at the French Laundry and Jean-Georges Vongerichten at Vong. For the past decade, Tran has opened restaurants and pop-ups throughout southern California where he works closely with local farmers and artisans to create dishes that pay homage to his Vietnamese roots as well as the global flavors from his extensive travels.
