A VISIT TO A THAI CULINARY HAVEN - RIM NAAM
Rim Naam in Thai means 'By the water'. True to its name it is a beautiful alfresco restaurant nestled amongst a rain tree, bamboo groves and tropical gardens.It rests upon a lily pond with a sweeping view of the greens and time stops still as you watch the playful Koi fish create a myriad of coloured patterns on the water. By day it is fresh, breezy and a washed with subtle sunlight and a spectacular view of the manicured gardens. At night it is romantic , quaint and dotted with flickering candles and infused with the subtle aromas from the frangipani shrubs.
Décor
The restaurant was built as an alfresco fine dining place overlooking the magnificent gardens. It was built upon a platform which is ensconced in a man-made lily pond. The initial design did not have a roof above, however, predicaments of monsoon or strong wind conditions made way for a tiled roof to be put in place guarding the diners from extreme weather conditions while enjoying the benefits of alfresco dining.
The hotel, was built by Mumbai based architects I.M. Kadri of Kadri & Associates and was designed by world famous Hong Kong based design expert , Chandu Chadda.
The restaurant has an open kitchen which allows the diners to take in the fresh aromas of Thai cooking, enjoy the spectacle of wok cooking and also choose the catch of the day from a seafood display. The paneling and woodwork are all teak, the furnishing is minimal and the colour scheme is fresh and inviting, depicting the restaurant. The primary colours used are a muted shade of green and yellow.
The Food
It serves authentic Thai with special emphasis on sea-food. It has won multiple culinary awards. The exotic offerings are the fresh catch of the day like white and red snapper, black and white pomfret,garouper,lobster,scampi,crab and so on. Each dish is prepared for the customer, based on his/her liking of spice and taste personally by the Chef.
Some famous dishes are grilled scampi, duck yellow curry, prawn and crab cakes with plum sauce, pineapple rice , lobster in Thai spicy sauce and the list can go on.
A large focus remains on importing key ingredients like fish sauce,galangal,kafir lime, Thai green and red chillis, tamarind, turmeric, pea aubergines to retain the authenticity of the cuisine served.
