Jamavar at The Leela Palace New Delhi is the signature Indian fine dining restaurant offering authentic Indian cuisine from the royal kitchens of India. Continuing the centuries-old saga of elegance and drama that forms the core elements of the distinctive cooking styles and rituals of India’s ancient nobility, the name Jamavar is taken from the famous sixteenth century Jamavar shawls of Kashmir. Created from the delicate under-fleece of Tibetan mountain goats, the fabric illustrates the art and culture of a bygone era. Combining the flavors of Delhi, across the ages, Jamavar at The Leela Palace New Delhi also offers award-winning dishes from other hotels in the group: culinary celebrations at Jamavar are sure to leave a lasting impression.
Each dining experience at Jamavar is a journey of the senses; the delicate aromas and flavors that melt in your mouth are specially handcrafted with meticulous attention to detail by our chefs. Guests can experience innovative dining with a culinary passion that spans the entire spectrum of Indian cuisine. The signature dishes of the restaurant include Lobster Neeruli; an exquisite delicacy from the coastal city of Mangalore, Bharwan tandoori broccoli, a tandoori baked broccoli stuffed with corn, cheese and fresh pomegranate; Dhaniya murgh; famous North Indian dish made up of boneless of chicken cooked with pounded coriander, Gosht ki nihari; traditional Awadhi lamb delicacy flavored with saffron.
The décor exudes elegance with the soft light emanating from ornate crystal chandeliers, reflected in the extensive mirror work adorning the restaurant’s walls. With hand carved wooden screens, decorative jamavars of gold and silverwork set against the entrance, flower-laden vases and silver Empire pattern cutlery by Guy Degrenne and crockery by Bernardaud, each guest experiences true royal Indian dining. The restaurant also offers a wine display with over 250 labels in a striking display wall with a large section devoted to international brands.
Chef Vinod Saini is a confident and creative professional with over two decades of sound experience in fine dining Indian restaurants and luxury hotels in India and Overseas.
He began his career with The Oberoi group of hotels in India. Started working at their flagship hotel in New Delhi in 1989. He successfully held fort at the signature Indian restaurant Kandahar. Under his leadership Kandahar was named as one of the best Indian restaurants in the city.
After 15 years with the Oberoi group, he moved to Canada for opening fine dining Indian restaurants in Toronto and Vancouver in 2005.
Post his overseas stint, he returned to join Marut Sikka’s celebrated restaurant called Kainoosh as Executive Sous Chef in New Delhi. Chef Saini worked closely with India’s celebrity Chef Sikka to further enhance his skills and learnt finer nuances of regional cuisines. The restaurant excelled with Chef Saini’s midas touch and unique presentations.
Excelling at innovative Indian food yet retaining the authenticity of the cuisine is Chef Saini’s core competence. He has been with The Leela Palace New Delhi since pre opening as the Master Chef – Indian cuisine. With his expertise, Jamavar has continuously invented and reinvented cuisine from royal kitchens of India.
Spear heading The Leela’s endeavor to showcase Indian Cuisine at a recent food festival at Switzerland’s leading luxury hotel Beau Rivage Palace, Lausanne, he garnered remarkable feedback. He has been honored as the Best North Indian Chef by Food and Nightlife Magazine recognizing his fine sense of Indian cuisine.
In his free time, Chef Saini loves to listen to classical Indian music and try his hand at landscape photography.
