Since its inception in January 2002, JW Marriott Mumbai has set the standard for contemporary luxury and warm hospitality. Arola is the stunning offshoot of two star Michelin Chef Sergi Arola. His eponymous offering has set the city alight with a nouveau concept of high end dining along with a late night lounge venue.
Sergi Arola is a bold, irrepressible culinary trend-setter. A definitive proponent of Spanish heritage, he is set to delight guests in Mumbai with gourmet Spanish cuisine. A chef who weaves stories of his homeland into his preparations, his explosive talent has earned him two Michelin stars and he is the proud owner of six celebrated restaurants around the world.
Arola offers an unique culinary concept by the chef ‘Pica Pica’ – a style of dining where a variety of creative dishes are served on a platter for all to share all presented on small beautiful ceramic, glass and stone plates. A selection of Pica Pica preparations is the main focus, with an à la carte menu provided, so that a mesa style of plates can accommodate a shared approach for those who wish to dine less formally.

The venue forms an integral part of the hotel in the style of a private residence. This exclusive dining destination commences from the main lobby, entering a small reception area before being confronted with large doors leading in to the main space. The terrace and main floor are dominated by a glass open kitchen, full of action and color located on the back wall of the dining area.
The design is organic with textured wooden floors, rustic artifacts contemporary wood fixtures all coming together to give guests a timeless feel. Modern lounge music, candles, spot lit kitchens creates an active and lively ambience full of warmth. Bright strong colors such as burnt oranges, mustard and chocolate brown complements the dark wood and stainless steel elements.
The music, a key aspect of the restaurant, is contemporary lounge with distinctive Spanish & Latino influences staying true to the theme of Arola. Exclusively put together by DJ Pranav, a well-known voice in the music industry, the music adds a beautiful element the restaurant. Also, during the weekends, Arola hosts ‘Arola Musica’ which combines electronic beats with acoustic instruments to accompany the authentic Spanish tapas and signature drinks, Arola Musica in association with Electric Zoo Goa brings in local and international DJs for the fusion nights on every Friday and Saturday. Arola has also come up with drinks that are specially prepared for Arola musica, which include drinks like gin sonic, cosmo and cosmo raga. Not only that, twice every month, Arola hosts sundowners in association with various partners.

Chef Manuel Olveira Seller has been appointed the Chef de cuisine at “Arola”, at the most new restaurant by 2 Michelin Star Chef Sergi Arola in JW Marriott Mumbai. With over nine years of experience in this industry, Chef Manuel brings with him creative skills and expertise gained from working in numerous exclusive Michelin star restaurants.
At Arola, Chef Manuel is responsible for setting up the menu according to the required ‘Arola’ standards to ensure delightful and accurate execution of food preparations.
Prior to joining Arola, JW Marriott Mumbai, Chef Manuel worked closely with Sergi Arola at another restaurant helmed by the star chef - ‘Sergi Arola Gastro – Madrid’, also a multi-Michelin star restaurant since 2009. During his tenure, Chef Manuel adapted to the unique style and innovative flair of his mentor Sergi Arola. This restaurant won rave reviews for its innovative Spanish cuisine, creative presentation and wine pairings.
Prior to this in 2005, Chef Manuel began his career with ‘Bohio’, a Michelin star restaurant in Illescas - a municipality located in Toledo in Spain.
His passion for cooking comes from his family’s enthusiasm to gastronomy and working in different restaurants over the years. He strongly holds the philosophy of healthy and authentic cooking. He is a proponent of Mediterranean cuisine and respects the individuality of each ingredient he cooks with.
He holds a Graduate degree in Hotel Management from the Culinary School of Toledo, Spain.
His hobbies include travelling, trying out new cuisines, and meeting new people from different cultures and learning from their culinary experiences.
