Unlike many chefs, Chef Bikram hasn’t always dreamt of being behind the pots and pans. In fact, being born in a family where nobody is from hotels, he wanted to become a Doctor. However, this dream didn’t last long, as he suddenly found his calling as a chef.
After graduating from the IHM, Kolkata in 2009 he has an impressive career, working at Rajasthan, Pune, Hyderabad, and Bangalore. Bikram has joined The Blue Ginger as the outlet Chef. For over 6 years, Bikram has been working in the kitchens with expat Chefs from Vietnam, Thailand and Indonesia. On any given day he can be found quietly leading his team by example; most often working right alongside them as they prepare for the day.
He favours shopping at the local market and it could be as early as 5 AM at the fish market in Shivaji Nagar. There are few practices to live by in Blue Ginger kitchen, when one is wearing the white coat always remember – clean, fresh, flavour – an admirable commitment to food that is evident on every plate.
