Blue Ginger recreates a magical journey of flavourful Vietnamese Cuisine by offering exquisite cuisine for the seasoned palette. The cuisine has been shaped by its geography, and is tempered by its colourful history. No two meals taste the same in Vietnam and we are delighted to uphold same culinary traditions at Blue Ginger. Not only the atmosphere is soothing but also the food is fresh and beautifully cooked. Famous for abundant fresh herbs and greens, delicate soups, stir-fries and well-seasoned grilled food served on, or with, rice or noodles are the mainstays of the Vietnamese delicacies and it calls for an array of simple dishes that make complementary partners at a family's communal meal.

With chefs from Vietnam and authentic Vietnamese ingredients, this healthy combination leaves a long lasting flavour on your dinning experience.

Chef Akshat Mallick

Chef Akshat Mallick is a graduate from Chandigarh Institute of Hotel management and has been working with the Taj for over 3 years. Trained at the Orient Express at Taj palace, Akshat has a flair for delicate flavors and traditional cuisine. Akshat specialized in bakery and confectionary the influence of which can be found in the Blue Ginger menu.

He has been with Blue Ginger since august 2013 and is passionate about exceeding guest expectations.
