About the Restaurant

Blue Ginger recreates a magical journey of flavourful Vietnamese Cuisine by offering exquisite cuisine for the seasoned palette. The cuisine has been shaped by its geography, and is tempered by its colourful history. No two meals taste the same in Vietnam and we are delighted to uphold same culinary traditions at Blue Ginger. Not only the atmosphere is soothing but also the food is fresh and beautifully cooked. Famous for abundant fresh herbs and greens, delicate soups, stir-fries and well-seasoned grilled food served on, or with, rice or noodles are the mainstays of the Vietnamese delicacies and it calls for an array of simple dishes that make complementary partners at a family's communal meal.

Chef Animesh Minj

Animesh Minj – Age – 29, has been in the industry for the past 7 years. An IHM Pusa alumnus, he holds a degree in Hotel Management and Catering Technology. He joined the Indian Hotels Company Limited as a Hotel Operations Management Trainee in 2007. After completion of 2 years of extensive training in various kitchens at the Taj Palace Hotel, New Delhi, he was posted at The Orient Express. In August 2012 he was transferred to the Blue Ginger & Blue Bar, and has been there since.
