About the Restaurant

Dum Pukht recreates the 200 year old culinary legacy from the kitchens of the nawabs of Awadh with a tradition of cooking over slow fire in sealed earthenware pots.  Dum Pukht is the winner of Asia’s first ‘’Golden Fork Award’’, and is listed as one of the ‘’World’s 50 Best Restaurants’’ by the ‘World’s 50 Best Restaurant Academy’. 

As you enter Dum Pukht, you enter the magnificent era of the Nawabs. The sapphire blues, gorgeous chandeliers, and welcoming staff make you feel like royalty. The splendour of Awadh can be experienced through the flavours, aromas & textures of the beautiful food that is served. Chef Gulam Qureshi

Master Chef Gulam Qureshi of ITC Hotels honed his skills while working with his illustrious uncle, Chef Imtiaz Qureshi. Working for the ITC Maurya since 1977, it’s not surprising to have Qureshi become the brand custodian of the award-winning restaurant Dum Pukht. Qureshi’s illustrious career with ITC Maurya saw him opening Dum Pukht in 1988 along with Chef Imtiaz Qureshi. His accomplishments gave him accolades including the Golden Fork Award and an opportunity to cook for heads of state like Bill Clinton.
