New Delhi, November 6 2012: Pullman Gurgaon Central Park, the first upscale business hotel brand of Accor, gets ready to welcome their guests to La Riviera, the newly launched urbane dining speciality restaurant with an eclectic Southern French – Italian Coastal inspired cuisine
Located at the Lobby Level, the 70-seat La Riviera is the first speciality cuisine restaurant at Pullman Gurgaon Central Park. The inspiration behind La Riviera comes from Accor’s French heritage, an opportunity to showcase a version of French cuisine that is relatively unknown in this part of the world. Instead of the heavy sauces of traditional “haute cuisine”, the food of southern France (and northwest Italy) reflects the lightness of the sunshine that tempers the climate of this beautiful coastline.
La Riviera is an all-encompassing, sublime experience for the perfect evening, and, as you walk through the glass doors, a beautiful hand-blown glass art installation by renowned artist Reshmi Dey is a welcome sight. The restaurant is highlighted with accents of red and silver that compliment the beautiful crisp white table setting and warm decor and has a running panel of large bay windows that overlooks the flame-lit poolside area.
The highlight of La Riviera is the flamboyant red Molteni cooking suite, showcased behind a ceiling to floor glass show kitchen, where the chef will enthral the guests with his craft. This provides a source of enigmatic entertainment for the guests.
A wine and cheese room within, La Riviera also offers the finest of wines from the French and Italian Riviera, complemented with a wide array of French cheese. Engaging interaction with the guests, one can choose from a diverse array of seafood from the live aquarium at the restaurant.
The menu created by culinary maestros and Tanveer Kwatra & Amit Kumar , features select delicacies from the French and Italian Riviera, wherein traditional recipes and modern interpretations balance each other. Tanveer Kwatra works at Pullman Gurgaon Central Park as Executive Sous Chef. In his current position, he is responsible for the overall administration of the culinary department at the Pullman Gurgaon Central Park, and specifically quality and authenticity of food flavors at La Riviera. Food philosophy at la Riviera an aim to create food with strong influences from Riviera region (cote azure and Liguria) with emphasis on the textures and flavors of the produce, Food that tastes beautiful that takes you on a journey of different sensations. It's all about what’s happening on your palate.
The origins of our food lies in the heart of the European Riviera influenced lay the style of the ‘playground of Europe”. The warmth and freshness of the cuisine is preserved in the plate presentations. It is a visual and flavorful journey through the sun- kissed coast of the Northern Mediterranean.
His previous assignments include stints as Chef de Cuisine at the Starwood Hotel Complex in Fiji, where he was in charge of all western cuisine restaurants in the Westin and Sheraton resort and Sous Chef at the Crown Casino in Melbourne, Australia.
Graduating as a chef from William Angliss tafe affiliated to Victoria university Melbourne, Tanveer joined Grand Hyatt initially and then Crown Casino, where he worked with famous names of the culinary universe like Michael Bannerman, Andy north and Philiip Mouchel. He has also been an integral part of food and wine festivals in Melbourne until 2009 which included his work with Michelin star Chefs Deiter Muller, Fergus Henderson, April bloomfield. His gift of innovation strives to continuously raise the benchmark for guests seeking a unique dining experience. Despite being away from his homeland, Tanveer finds himself completely at ease to be back in India. He is excited by the prospects of the burgeoning culinary scene in Delhi; he feels that the nation’s capital is at the cusp of a culinary revolution, similar to where Melbourne and Sydney were a decade ago.
Amit Kumar was born and raised in Bihar; helping his mother in the kitchen from an early age probably decided his career choice to be a chef. From his early experience with Trident Gurgaon, Ista Hyderabad established his skills as a chef. Thereafter, he joined Westin Hyderabad at their signature restaurant “Prego” For the past 18 months, Amit has been one of the creative forces that has established La Riviera at the Pullman Gurgaon Central Park as pone of the premier Western fine-dining restaurants in the NCR.Amit’s “back to basics” approach to cooking ensures that the produce is the central to the flavors of the dishes he cooks; he is a stickler to details regarding the freshness and quality of the produce that he uses to create his masterpieces
