Travertino is a classical Italian restaurant that offers the finest Italian cuisine and Italian wines. Hotel Hassler has assisted in recommending and placing the professional team at Travertino.
The restaurant takes its name from Travertine stone that plays a strong part in the design and interiors. A honey coloured stone typical to Italy, Travertine stone was most commonly used by the ancient Romans. Famous structures constructed with Travertine include the Colosseum, the Trevi Fountain, the Colonnade of Saint Peter's Basilica and many Roman aqueducts.
A contrast between rough and smooth treatment of the stone has been used in the interiors of Travertino. The main restaurant wall makes use of the inherent transparency of the stone where a soft back light creates an unusual effect that highlights the quality and elegance of the stone. The restaurant has a contemporary design with sage green upholstery lending understated elegance.
Situated at the lobby level, the restaurant has 58 covers and offers a fine dining experience with classical cuisine. The culinary essence of Travertino is traditional and authentic Italian cuisine with a strong creative element. The menu offers a variety of fresh home made pastas including gnocchi, ravioli, fettuccini and lasagna; Polenta and classical Italian specialties like Breast of Guinea Fowl, Pan Seared Diwers King Scallops with Black Truffles and Grilled Vegetables in Balsamic Vinegar. Travertino offers a rare Italian cheese menu that includes popular cheeses from the various regions of Italy. To ensure authentic flavor and taste, most of the ingredients used are sourced from Italy.
Travertino also offers an extensive Italian wine selection from the Enoteca wine cellar including classical wines such as Amarone, Chianti, Brunello, Super Tuscan and Barbera.
Chef Davide Rebeccato, the charming Venetian Chef from Padua, Italy joins us and brings with him a new menu to Travertino. He has applied his creative ingenuity to the authentic traditional recipes to design this special menu, with ingredients specially flown from Italy.
Chef Davide is a well trained exponent from the esteemed Hassler Foundation in Rome. As a well-travelled Chef, Davide has employed his expert touch and culinary skills around the world, from Rome to London and even the Caribbean island of Antigua. His approach towards cooking is to bring the authenticity of a region, with an innovation that defines his true style.
