About the Restaurant

Botticino, the Italian specialty restaurant, serves traditional Italian cuisine with a contemporary flair.  The menu includes specialties from Piedmont, Lombardy, Emilia Romagna, Tuscany and Lazio.  A two storey enoteca offers over 120 wine labels from all across the world, allowing for perfect wine and food pairing.  The restaurant also features a display of authentic grappa from the House of Alexander Botega in beautifully designed Venetian hand blown glass bottles.

Chef Vikas Vichare

For Mumbai born and brought up Vikas becoming a chef was the obvious choice since his father had a flourishing catering business in Mumbai. Little did he know that the choices he made then would become a way of life for him and he would continue to grow and excel as a culinary expert.

A painter and dramatist in his free time, his creativity is well utilized while he dons his chef cap.

Vikas completed his high school from Bein Sister Nivedita before enrolling in the Institute of Hotel Management in Goa. He then joined The Oberoi Udaivilas in the western kitchen followed by two years at the Oberoi Centre of Learning and Development to complete his education in hospitality. Known for his passion to win, as a student he always excelled at academics and extra-curricular activities and was awarded a gold medal in the chef’s culinary talent competition.

Delhi is his favourite city and he feels that most people mistake him for a Delhi boy given  the long time he spent there honing his Italian skills at Travetino, another one of the company’s fine dining Italian restaurant before making his way back home to Mumbai to launch Botticino, the Italian restaurant at Trident, Bandra Kurla.

Organized and perseverant, Vikas is an innovative thinker, always striving to explore the unknown. His early days with Chef Tuomas Heikkinen, not only taught him the recipes of Italian cuisine but also gave him an insight into the Italian culture and its people which led to his better understanding of the cuisine. 

His guests are often awestruck by the sheer quality of food that he puts out, choosing the finest of ingredients and putting it in front of them with his inimitable charm and smile.

An avid learner and perfectionist, he is pushing himself to be a better photographer so that he can capture his creations and bring them to life in the form of a book someday.

Some of his signature dishes include:

·        Scallop and Bacon Risotto

·        Spinach and Ricotta Ravioli

·        Grilled Grouper with Broccoli sauce
