MEKONG is an authentic Asian culinary journey down the Mekong River designed to transport the city’s diners to the old-world mystique of the River’s neighbouring cuisines.

Beginning with true tastes of Yunnan, the province with a great variety of remarkable cuisine - aromatic, flavorsome with a strong ethnic character, the journey flows south to Vietnam and Thailand. Experience the four flavours that are the main tenants of the regions cooking style at Mekong - Salty, Sour, Sweet and Hot. Chef Cheang Chee Leong is the Chef De Cuisine at Palladium Hotel’s award winning Asian restaurant, Mekong.
With a career spanning over 13 years, Chef Leong comes with abundant experience that allows him to efficiently execute his current role as Chef De Cuisine. Prior to joining Palladium Hotel, he worked at popular properties, such as Shangri-La Hotel, Manzhouli, China; The Ritz-Carlton Hotel, Kuala Lumpur; and Renaissance Cruise, Singapore.
Chef Leong’s career began at the young age of 15 when he worked at a restaurant in Malaysia. He is keen on creating new recipes and challenging himself constantly. He has a special interest in Vietnamese cuisine because each dish embodies a unique character and because there is always a need for precision and artistry when preparing a delicacy.
Aside from having a passion for motor bike racing, he is also fond of monumental architecture, which India is renowned for.
