Linking the two floors is a dramatic staircase lined with wine racks. A small but impressive wine list includes the best of the old and new world wineries, including a hand-picked selection of Bordeaux and some of the best blends from emerging wine producers in the Nashik region of India. The extensive wine-by-the-glass list offers classified clarets and a unique selection from boutique wineries. Guests are guided through the options by a young and passionate team of wine butlers eager to show off their knowledge.
After a career spent in a closed kitchen, Chef Jiang Xin (Ralff to his friends) is ready to show the world what he’s got. “I love the feeling of being on show,” says the newest Sous Chef in the Chinese enclave of San:Qi’s open kitchen.
Striving for perfection was par for the course in the Xin household. As a young boy, Ralff dreamed of being a soldier, inspired by his uncle, a member of the Chinese Army, and his father, a strict disciplinarian. Little wonder, then, that approaches his role as “a daily battle for victory” and teaches his young chefs the importance of never giving up: “No matter how hard you fall, it’s important you get up and battle on. No matter how it makes you feel at the time, it will only make you stronger.”
Ralff cites Chef Gordon Ramsay as his biggest inspiration: “I just love his passion and drive, and how beautifully he turns seeming chaos into art.” He’s also a huge fan of spice – and relishes the fact that he can be extravagant with it in Mumbai, a city where “every culture beautifully coexists in charismatic chaos, making it a wonderful playground for culinary adventures.”
And when he’s done with experimenting in the kitchen, Ralff likes nothing better than to let his hair down at a good party, operating with the same insatiable drive whether he’s out on the tiles or celebrating a victory for his beloved Real Madrid. And all of this powered by joie de vivre…
