About The Restaurant

Ellipsis is a modern american dining concept, with menu items inspired by a myriad of ethnic ingredients and international techniques.  Owned and operated by IB hospitality, the goal of Elipsis is to curate the best in class and refine the experiential dining scene in Mumbai.

In order to build IB Hospitality from the ground up, Founder & CEO Rohan Talwar sought out a dream team of international experts from all crucial aspects of the business, combining their skills with his vision to take guests on a world-class culinary journey through Ellipsis.

Chef Kelvin Cheung

Kelvin Cheung joins the IB Hospitality team as Executive Chef for Ellipsis.  A third generation chef, Cheung has worked in the kitchen since the ripe age of 12.  A graduate of Kendall College, this unique work opportunity reunites him with Sous Chef James Palm and Chief Operating Office Ranbir Batra, both attendees of Kendall College.

The Canadian native has spent most of his life in Chicago, however his first job took him overseas to Belgium where he was trained in classical French fine dining. His career also includes running a resort in British Columbia as well as working with a boutique hotel in Toronto, Canada.  Cheung food nods to molecular gastronomy, but most importantly is appreciated for fresh, high-quality ingredients and the use of as much local produce as possible. 

His experience has spanned from a family-run restaurant to helming an award winning kitchen-- Cheung was Executive Chef of Ginger Asian Bistro in Chicago when it was voted Best New Restaurant by Chicago Magazine.   He brings excitement and  experiential innovation to the Ellipsis kitchen.
