About The Restaurant

INDIGO is one of India\'s premier restaurants. A back-to-basics address that serves up an eclectic European-Asian cuisine coupled with an expansive bar and banqueting facility, it opened its doors in April 1999. Called Indigo for the name\'s sheer simplicity, Indigo was designed from day one to embrace three basic principles of excellent food, warm hospitality and superior levels of service. It is housed in a restored turn-of-the-century bungalow off the Colaba Causeway in South Mumbai.

Eleven years since it opened at Colaba,  Indigo continues to grow its reputation as a food-centric, uncompromising, fine-dining establishment, both in India and abroad. Everything is designed to make sure that the food is the star of the show.  The ingredients are seasonal and very fresh and the creative fare is balanced and augmented by one of the best wine lists  in India and an array of adventurous cocktails. Nitin Kulkarni

A diploma holder in Hotel Management, Indigo\'s Executive Chef Nitin Kulkarni has worked in many international kitchens over the past 23 years.

He started his career with the Ambassador Group’s flight kitchen business in 1981 and went on to work at the Oberoi.  In 1986 he went to work in Iraq and then Carnival Cruise Lines in Miami, USA. On board the cruise ship, he earned his stripes and became an executive sous chef aboard their flagship Carnival Destiny where he lead a team of 120 cooks providing meals to over 2,000 guests, 6 days a week.

He has been with Indigo since its outset and has been instrumental in helping put Indigo on the world culinary map. As Rahul’s right-hand man and now as the restaurant’s executive chef, Nitin consistently maintains a high degree of quality food production standards in the kitchen and the restaurant’s F&B operations.
